WHAT IS COLD PRESSED OLIVE OIL?

Cold pressed olive oil is the process used to get EVOO. It is where pressure is used to extract the oil rather than heating to a specific temperature.

WHAT IS THE DIFFERENCE BETWEEN REGULAR OLIVE OIL AND EVOO?

The difference comes in the extraction process and from the levels of acidity. 
Extra virgin olive oil comes from the initial pressing of the olives, so is essentially the juice of the olive. As Extra Virgin Olive Oil is not treated with chemicals or altered by temperature it is considered unrefined. EVOO has a low level of oleic acid, containing no more than 1%, typically has a darker golden-green color, more distinct flavor with a light peppery finish.

 

Pure Olive Oil is a lower quality olive oil than Extra Virgin Olive oil that is considered refined because it has been altered and heated, it has a lighter colour, a more neutral flavor, and has an oleic acid number between 3%- 4%.

HOW IS OLIVE OIL MADE?

EVOO is cold pressed, which is the best way to keep olives' healthy antioxidants and monounsaturated fats in the oil. It also keeps the most olive flavor and has a lower acidity.Regular or “Pure Olive Oil” is a mixture of Virgin and refined oil. The oil is not cold pressed, but instead is maintained at a certain temperature during the process of extracting the oils.

WHY ARE SOME OILS LIGHT AND SOME DARK?

The color of the oils is not a direct reference to the quality of the oils, but tells more of the age of the olives and of the amount of Chlorophyll in the oil. Young olives that make up the early harvest oils produce an oil that is a deeper and greener color whereas more mature olives produce a buttery golden color olive oil.

WHAT'S THE DIFFERENCE BETWEEN FUSED AND INFUSED OLIVE OIL ?

Fused olive oil, also known as "agrumato" in Italy, is made by crushing ripe olives with whole fresh fruits, herbs or vegetables. I.e The fruit, herbs, or vegetables are thrown alongside the olives and crushed at the same time. This way the oils from the added ingredients are able to mix together beautifully with the olives.

Infused olive oil means that the flavor has been added after the oil was made. All of Rain City Olives infused oils are made with completely natural ingredients.

HOW WOULD THE USE OF PURE OLIVE OIL AND EVOO DIFFER?

Pure Olive Oil has a higher smoke point, is a lower quality than EVOO, is produced in larger quantities, and is cheaper to buy, therefore, it is better as an all-purpose cooking oil.Extra Virgin Olive Oil, EVOO, has a lower smoke point so the oil will start to burn and lose its form and quality at a lower temperature. EVOO is great for dishes that don’t require heat such as dips, dressings, cold dishes such as salads, drizzles, and dipping bread.
